2010-09-01 How to get dinner on the table Listen to your mother.

Its a matter of time, no doubt. Balchs mother, Marilyn Schmidt, was a stay-at-home mom, and her daughter works part-time. But Schmidt also didnt attempt to re-create restaurant-quality dishes. Even though she doesnt consider herself a natural cook, Balch wants interesting food for her husband and two children (she even taught herself to cook Thai food), but ambition has outstripped her skill.

Perhaps most important, she didnt develop any real strategies, unlike her mother and many others of that older generation. "I dont know why I hadnt followed her lead earlier," says Balch. Once she did, she no longer needed a pantry full of exotic ingredients or a raft of involved recipes. Following a simple plan of plain meats and vegetables, she could cook without making dinner into a production.

2010-08-31 The Thai Capital Fund Reports Second Quarter Earnings - MarketWatch

The Thai market continued its recovery in . Local politics became more stable after the crackdown in May, while the impact on the domestic economy remained limited. External economic situations were still of concern, but the impact on the Thai market was limited as foreign investors had small positions in Thai stocks. From concerns over a dimmer prospect for global economic recovery, investors pulled back from risky assets and then turned to safe havens as the U. S. 10-year treasury yield hit its lowest level since . Downside risks appear to have risen due to a significant deterioration of financial conditions including growing concerns about sovereign risk and the fragility of the banking sector in Europe. Recent economic indicators of many countries have been less encouraging as well. Another major

2010-08-30 Bangkok Post : More meat on global menu

The bright outlook for Thailands food exports has drawn substantial new investments in the livestock industry, with expansion in meat products driving the country closer to its ambition of becoming a major world food supplier.

The expansion aims to support GFPT Nichirei (Thailand), a 1. 56-billion-baht joint venture between GFPT and Japans leading food company, Nichirei Food Inc, to make frozen and processed chicken for export.

Kukrit Arepagorn, manager of the Thai Broiler Processing Exporters Association, said Thailand ranks at the top for exports of cooked and semi-cooked products thanks to high production skills in cutting and the ability to produce various products to meet market demand.

2010-08-29 Grow a mix of specialty herbs for the kitchen

One of the benefits of having The Chronicles Home and Garden department share an annex with the Food and Wine staff is collaborating on various garden-to-table projects. Its one thing to write about restaurants and their sustainable gardens - its quite another to take the bounty from our own rooftop garden and see seasonal recipes being created in our test kitchen.

We thought so, and ended up with a list of about a dozen herbs we wanted to grow. The list inspired intriguing culinary possibilities offered up by cookbook author Eric Gower, who writes Food and Wines Breakaway Cook. For a guide to the herbs, and how to grow, harvest and use them, see Page

Place a medium-size stockpot on medium-high heat. Add chicken broth. Just before broth begins to simmer, add onion halves, ginger, star anise, clove, black peppercorns, garlic, cilantro stems and Thai basil stems. Reduce heat to low and allow the herbs and spices to steep for about 10 minutes. Add chicken breasts and poach for about 20 minutes. Remove and set aside to cool slightly. Shred chicken by hand into thin strips. Use a slotted spoon to remove herbs and spices from the broth so all that remains is broth. Increase heat to medium high and add fish sauce, sugar and salt. Add shredded chicken. Drain noodles, and add to broth. Top with green onions. Assemble garnishes on the plate and serve immediately with soup.

2010-08-24 Sauls Deli in Berkeley Loses Top Chef - The Bay Citizen

Ideally, I want to spend a couple of years in New York and then come back and open my own restaurant. I and rsquo;d like to serve Vietnamese food like the dishes I grew up with, not so much the wok style of Vietnamese cuisine that (Slanted Door chef) Charles Phan has popularized. I want to introduce people to the kind of Vietnamese food that is more similar to Cambodian and Thai cuisine.

I and rsquo;ll miss Acme Bread, just their regular baguette, it has such a great crunch. And I and rsquo;ll miss the quality of our produce. I and rsquo;m sorry, I and rsquo;ve been to the farmers and rsquo; market in New York City and its just not the same. Chefs there like to say that West Coast chefs think we and rsquo;re so hot, but it and rsquo;s really just the quality ingredients we have to work with that makes our food taste good. But you have to know how to handle those ingredients with care and bring out the best in them. I and rsquo;ll also miss the fresh fish from Monterey Fish Market. I just don and rsquo;t think that a fresh rock cod sourced from local waters tastes the same once you ship it across the country.

2010-08-23 Darien Patch, CT - Little Thai Kitchen, Big Bold Flavors

I ordered a Singha Beer from Thailanda light, crisp ale that works wonderfully with the spice and boldness of Asian foods. First to arrive was the Tod Mun, fish cakes served with cucumber salad, crushed peanuts, and a sweet chili dipping sauce. The cakes are flat pancake-like discs that combines white fish and eggs with red curry, lime leaf, fish sauce, and other tangy flavors; the texture is not unlike that of an overcooked omelet. They were tasty, fun, and great to nibble on with the cold Singha.
