The long week of fashion shows in Paris was like a series of well-cooked dishes: some in a minimal, nouvelle style, deliciously light and ethereal on the palate; some quite heavy in the French bourgeois tradition, with a lot of foie gras and sweetbreads; others more exotic, vegetable masalas with many ethnic spices, from Morocco to India. But by the end of the week, as an international audience of sheiks, oligarchs, Thai queens and Dutch conquistadors finished their supper, it did not add up to a sumptuous meal. Lets just say there was no new taste sensation.

As part of its effort to globalize kimchi, the South Korean government collaborated with the Cordon Bleu to develop more Western-friendly recipes that are available at the Food in Korea Web site. Some, such as sesame kimchi twists and Camembert-and-sesame kimchi fritters, sound promising. The chocolate cake with kimchi and the napoleons filled with kimchi pastry cream Not so much.

Next day: Drain the soaked vegetables in a colander, squeezing out as much water as possible. Place the vegetables in a large bowl. Combine the garlic, ginger, fish sauce and salted shrimp in a food processor or blender; process until finely minced. Add the scallions, mustard greens, garlic-ginger mixture, chili powder and sugar; toss to coat evenly. (If you use your hands, wear food-safe gloves; the chili might sting or stain your hands. ) The mixture will have the consistency of a well-dressed salad.

To find out more about this years culinary submissions, Cruise Critic spoke with Bruce Ozga, dean of culinary education at Johnson and Wales University, who was on hand to taste test recipes from each of the categories. If you thought cruise food had a reputation for being boring, mass-produced dishes with little to offer in the way of creativity or intrigue, you might be surprised at some of the things coming from the creative minds of cruise ship chefs. "This year, there seemed to be more complex recipes; they took more skill," Ozga said. "There were more multi-component dishes. "

It sure sounds to me like some people have WAY too much time on their hands and are real quick to say something negative. I refer both to the original poster, Christa was it And some of the others as well. Onion is a valid vegetable, has lots of vitamin C. What do you know about Thai food anyhow I have lived here in Thailand for 3 years now and would venture to say that I might know a bit more about real Thai food than most of you around the Green Lake area. Yes, I lived there too, in the not too distant past. Next time how about try some nice deep fried meng mao Or larb moo, moo nam tok, khao nieow, good stuff like that. Add a few ants for garnish. Bon appetite.

We were very lucky, because I knew how important it would be to have a good chef. Krakow is lacking in good Asian restaurants, and Pong Thep was very serious about the food, because it has to be up to his standards, which was to get the fresh Thai vegetables that arent used in Krakow in other restaurants. We had the same idea, really. He said to me that things would have to be at a certain standard in order for him to cook in this kitchen, so we go to great lengths - we import ingredients from Thailand, through Germany. We have suppliers in Vienna just to get the fresh vegetables, which make such a huge difference in cooking. Most people just put in other ingredients, and its just not the same.
