If one of the basic tenets of finding good food from other countries is "go where the native language is spoken," when you enter Shiki youll know youre in the right spot. On a recent Thursday night, a few people are seated at the minuscule bar, and tables are occupied by groups of friends; everyone is in high spirits, and nearly everyone is speaking Japanese. The people next to us open a foil package and a cloud of steam wafts out along with the enticing smell of fish and vegetables; the Sapporo is flowing. Staff members chat with customers in Japanese, exchanging bows. Its an awfully long flight to Osaka, where husband-and-wife owners Yoshio and Misako Uda (they formerly ran Roka in Cambridge) are from; its nice to have a real Japanese neighborhood restaurant right here.

Subsidies to farmers and fishermen should also be re-examined. Currently, as much as 70 percent of farmers are 60 or older. There are so few newcomers that the situation is hopeless. In order to secure enough manpower to support farming and fishing into the future, we need a situation that allows farmers and fishermen to be able to support themselves economically. Subsidy rates should be determined for each category of foodstuffs such as grain, vegetables and fruits and marine and animal products and a system to directly compensate income should be introduced. While some critics say Japanese agriculture is overprotected, I disagree. The European Union and the United States have systems to directly subsidize farmers whereas this nations subsidy system is insufficient.

This summer will see the first British-grown edamame crop arrive in supermarkets. Kent farmer Joe Cottingham has successfully trialled a species that grows in Ukraine and is right for our long summer days. "Edamame has never before been grown in the UK," says Cottingham, who also grows 35 other crops, mainly herbs and leaves. "I love Japanese food, he says, hastening to add that the seed is non-GM. And when Anne Spencer, Asdas produce buyer, said she thought it would sell well, I thought I would have a go. " Pests are naturally controlled by a covering of mesh and Cottingham insists it is a deep-rooting plant that does not use a lot of water.

While it can hit speeds of 43 m. p. h. (70 km/h) and dive deeper than 1,600 ft. (500 m), the path of its annual migration, from Indonesia into the waters of southern Australia, is well known to fishing fleets. And since it starts spawning only after nine years and is usually caught much younger, southern bluefin hasnt reproduced enough to repopulate. In the 1960s fishers took 80,000 metric tons, mostly for canned food. As stocks dwindled, the catch was limited to about 12,000 metric tons a year for Japanese, Australian and New Zealand operators.
