We decided to splurge on the pink garoupa from the selection of live seafood. The true test of the mettle of any Cantonese chef is to simply steam the fish. This will not only show the quality of the fish but the skill of the chef. At Island Tang it was perfect. The fish was cooked with such impeccable timing that it was a masterpiece. Showered with shredded ginger and spring onions and doused with soy sauce and hot oil, it was one of the highlights of the evening. However, the best was yet to come: a signature dish of roasted crispy chicken. This is the dish of the moment in Hong Kong, as every other top restaurant seems to feature it. The version I had at Island Tang was by far the best I have tried. The chicken was simmered in a savoury broth, then hung to dry in front of a fan and finally deep-fried (not roasted) before serving.
