2010-03-15 Whats for lunch: At some cafeterias, cleanliness is an issue

Repeated problems at South Glens Falls High School include perishable food being stored above the required 45 degrees. Ketchum said he purchased better thermometer equipment to monitor the temperature the food is kept at.

At North Warren Central School in Chester, health inspectors over the last three years have found perishable food being stored above 45 degrees. The district was cited each year for not properly storing food items at a cooled temperature. That includes three quarts of ham pasta salad being kept at 54 degrees.

2010-03-11 Interview and Video: Director of VBS. tvs "Heimos Arctic Refuge" On the Most Far Out Americans : TreeHugger

Heimo and Ednas biggest concern was us being picky eaters. They had a documentary crew out there seventeen years ago - though they talk about it like it was yesterday - and they didnt inspire much confidence about us. But we loved it. My favorite food out there was the caribou steak cooked over an open flame. It was not the most exotic thing we ate--we had moose heart and caribou liver. But it was all just so solid. I have stomach problems, but I never had an issue. We were eating the most organic, free range meat on the planet. It was frozen in their yard, and it never touches a plate. It doesnt even touch a kitchen. He just saws and cooks it and we eat it right off the grille. It was the best food I ever had in my life.

2010-03-05 Dont overcook todays leaner pork

This was before advancements in meat technology brought us more tender products at the meat department. Calories werent the pressing concern they are today. Consumers had less access to easy, calorie-dense foods. There were fewer short-cuts to ease the physical, calorie-burning work load of daily life. Concern about food was more about getting enough than cutting back.

The National Pork Board recommends cooking pork to an internal temperature of 160 degrees F. Use a meat thermometer to prevent over-cooking or under-cooking pork. An instant-read thermometer is helpful. Slip it into the thickest part of the meat, but not touching a bone. Do not keep the instant-read thermometer in the meat while its cooking.

2010-03-03 Ashcroft Cache Creek Journal - Confusion over IH food rules

President of the Seniors Association Pat Kirby said, besides the dishwasher issue, the new thermometer for the fridge, the installation of a new vent from the stove to the end of the building just so they can cook soup and fixing the leaky tap that has dripped for 20 years, the Health Inspector has told her she can no longer buy their eggs from a local farm. The eggs that are turned into egg salad sandwiches for the seniors get-togethers are now forbidden because they arent graded properly and, either, no one knows what the chickens are being fed or the shells arent washed properly, depending on who you speak to at Interior Health, she said.
