At this time of year, we dine on so much food symbolism. Two noteworthy symbols: round challah, for the continuity of the Jewish year, with some even decorated with wings or ladders anticipating our spiritual ascent; and pomegranates, their seeds representing the commandment to be fruitful and multiply.

For a different new year, one filled with as many new experiences as the seeds of the pomegranate, a new combination is in order. Unless someone is planning to open a Rosh Hashanah food truck, we will need to come up with our own.

Laguna Beach, with Mission Viejo, Irvine, Ladera Ranch and Las Flores, received a usd. 400,000 grant from OC Waste and Recycling for the program. The food dehydrator will dry food waste at 180 degrees for about 18 hours. Bones and raw and cooked food can be put into the dehydrator. The end result looks like coffee grounds, and the Montage will use it as fertilizer.

The dehydrator reduces food waste by about 93 percent, a result thats in line with other sustainability practices at the resort. Other programs include using reclaimed water on resort landscaping, using energy efficient lighting and appliances and using filtered water over bottled.
