Entertaining visitors from overseas in Istanbul is slowly becoming an enjoyable summertime practice. When it comes to food and especially dinner, its usually classic fish restaurants on the waterfront; Nevizade street meyhanes; or the pictorial gardens of Sunset and Ulus 29 up the hill with amazing views. Hence when guests from Beirut, Lebanon requested to eat Asian and especially Chinese food one evening, I was puzzled. A name that stands out every season for Chinese food is without doubt Dragon, located at the Hilton Hotel. Thank God Dragon opened their summer branch inside the attractive Reina Club a table was reserved at once. Personally a bit disappointed, as there were so many other restaurants I would have preferred to take my guests to for Turkish and Ottoman cuisine rather than greasy and overfilling

Nevertheless, neo-liberalist pundits argue that the most realistic way to raise global supply (hence the simplistic approach of supply and demand) is to replicate the Brazilian model of large, technologically sophisticated agro-companies supplying the world market. Accordingly, many areas of the world have good land that could be used far more productively if it were properly managed by large companies.

Let me just give you an example: With Japanese, Thai, and Vietnamese cooking- there are a lot of American and Western chefs that have taken a liking to the styles and ingredients. Theyre cooking it, but on the other hand, you dont really see American chefs really cooking Chinese food. The reason for this is that the "old men" Chinese chefs keep their recipes secret. I worked for one who used to make his sauces in the walk-in refrigerator during lunch just so nobody could see what he was doing. Basically, its partly a "theyre mine" mentality, but in the community it also means your job. My aunt and uncle owned a small Chinese coffee shop, and my uncle has never given away any of his recipes- theyre just secret. He wont even write them down for my aunts, even if they want to cook this stuff at home for themselves.

I agree COMPLETELY with cvandoom and bastylefilegirl. Westernized Chinese fare is totally different from authentic Chinese food, and I think this difference should be clarified in future posts. Westernized Chinese food might as well not be called "Chinese" anymore because it is so different from actual Chinese cuisine. For example, we dont generally deep-fry chicken like General Tsos. I live in Beijing and Ive yet to see deep-fried chicken in any menus of Chinese restaurants. That being said, I eat the Chinese food my parents make every day and based on that, I can say its definitely healthier than any American or "Americanized" cuisine.
