Cajun Cook-off sign-up deadline set for Sept. 10

The deadline is approaching to sign up for jambalaya and gumbo cook-offs at this years Great Cajun Cook-Off and Food Festival.

The festival is organized by the Cajun Cactus Foundation, which was formed in 2008 by a group of Southerners wanting to share hospitality and culture with Arizona while helping Gulf Coast and Phoenix charities.

In addition to the jambalaya and gumbo cook-offs, an "open" cook-off category could feature any Cajun specialty. Besides the cook-off the festival also showcases dishes from the Valleys best Cajun and Southern restaurants.

2010-08-26 Its game time: Central Louisiana football fans relish tailgating The Town Talk

Perhaps the most interesting tailgating foods Turner and his friends have attempted are Cajun delicacies -- theyve roasted pigs (or held a cochon de lait), and theyve even barbecued a whole alligator.

A fall tradition in Louisiana involves firing up the grill before football games. Walk through a parking lot in Baton Rouge, New Orleans or Lafayette, just to name a few locations, prior to a game, and chances are youll find all kinds of food.

2010-08-25 Twains Feast: Searching for Americas Lost Foods in the Footsteps of Samuel Clemens"

Beahrs records all of this with whimsical self-deprecation and a terrific spirit of adventure. Youll learn, along the way, the difference between Cajun and Creole cooking (Cajun came from French settlers from Nova Scotia and is country food, while Creole city food is less spicy, featuring more soups than stews. ) And youll understand, perhaps, what this American melting pot business is all about.

Inspired by Twains writing about food, Beahrs becomes a sort of fork-wielding Lewis and Clark, pushing his way through a wilderness of bland, processed, packaged foods and one-size-fits-all cuisine to discover the rich, wild flavors of 19th century America. He tracks prairie chickens in rural Illinois. He helps concoct raccoon stew in Arkansas. He muses on turkeys and terrapins while preparing these creatures for the plate, and that doesnt mean a trip to the grocery store. He whips up chess pie and waxes poetic about it: "A good chess pie is sweet and moist and custardy, like the platonic ideal of cookie dough. "

This week, the Ragin Cajun truck from Hermosa Beach and the Spencer on the Go truck from San Francisco, which specializes in high-end French food, raised the least amount of money. Luckily for the French, they had the best chile special of the day, earning them immunity.

The competitors cant use social media, but they can get wily. And thats just what the Nom Nom truck did as the herd headed to its latest pit stop in Santa Fe, N. M. 2010-08-19 Food Networks The Great Food Truck Race - Houston Restaurants and Dining - Eating Our Words

In this episode, most of the action is in getting to know the teams--Texas is represented by Austin Daily Press, a hipster sandwich truck (they wrap each sandwich in a piece of The Onion), and our neighboring state of Louisiana has its cuisine in the spotlight with the Ragin Cajun truck, counterintuitive-ly from LA. The Ragin Cajun folks are by far the most entertaining in the bunch, stereotypically loud and difficult to understand. The people behind Grill Em All, another truck from LA, market themselves as a bunch of heavy-metal badasses, but they arent exciting to watch, nor do they get much business. I would like to get a hold of their "behemouth" burger, however, which features two grilled cheese sandwiches for buns, bacon, cheddar and beer-soaked onions.

2010-08-14 Cajun Eats For a Good Cause

S Award-Winning Muffalettas: When my friend Helen introduced me to food writer and owner of Fort Defiance Caf in Red Hook, Brooklyn, St. John Frizell with the side note that his Muffaletta sandwiches were award-winning, I thought there was no way in heck that he would have the time to donate any to the S. P. I. L. L. But in fact, St. John came through with two large boxes stacked with 10-inch-round Muffalettas which we cut into eighths and served by the wedge (at usd. 3 each, they were a steal so most people left significant tips). 2010-08-13 DelMarTimes. net KITCHEN SHRINK: Words to the wise on avoiding summer cooking blunders

Summer is a time for grilling and chilling, but when the heat dials up and the cooking is transferred outdoors, the time is ripe for culinary disasters. Here are a few of my favorite summer food gaffs that have happened to friends, column folk and yes, me, the Kitchen Shrink, along with some suggestions on how to avoid them next summer.

Some friends did a casual potluck get-together this summer. The hostess didnt specify the kinds of dishes she needed, and when guests arrived, she was horrified at the repetition of food choices: four potato salads, four coleslaws, three trays of brownies, five whole watermelons.
